Ayurveda has given much importance to wholesome diet that is prerequisite for the promotion
of health and prevention of diseases. Much emphasis is given to factors like processing and
rules of healthy eating along with quality of food substance. Samskara is an act of processing
that result in transformation of guna of substances, either āhāra or auṣadha. Rice is the primary
meal of over 50% of people on earth and rakthaśāli, a variety of rice is considered best among
them. Lāja, pr̥ thuka and Anna are various forms of rakthaśāli mentioned in classics after
different saṁskārās. Nava and purana rakthaśāli is mentioned separately in the pathyās of
diseases as there are differences in gunas.
The study was done to determine the effects of selected saṁskāras on the nutritive value of
nava and purāṇa rakthaśāli by analytical methods. Samples of nava and purāṇa rakthaśāli were
processed into lāja, prithuka, and anna employing various saṁskārās – toyasannikarṣa,
agnisannikarṣa, toyāgnisannikarṣa, śoucha, kuttana and kāla prakarṣa. Nutritional analysis was
done on protein, fat, carbohydrate, energy, iron, sodium, moisture, dietary fiber, and ash content
using standard analytical protocols. The results showed considerable changes in the nutritional
profile, with an enhancement in protein, fat, carbohydrates, and iron in pr̥ thuka, and an increase
in energy, iron, sodium, dietary fiber, and total ash in lāja. An increase in moisture content and
a reduction in all other values were observed in anna. These observations obtained through the
nutritional analysis of different samples of rakthaśāli support the concept of saṁskāra resulting
in guṇāntarādhāna.

Manuscripts are handwritten documents that have scientific, literary, and aesthetic values. They serve as the foundation for historical knowledge of various traditional knowledge systems like Natya, Yoga, Ayurveda etc. According to NMM, more than 20,000 Ayurvedic manuscripts were identified but most of them remain unexplored. For proper understanding of the contents in manuscripts, they have to be made available in its most authentic form by conducting critical edition with the help of supporting evidences. As a step towards this, cikitsāpaṭalās of the manuscript ‘Prayogasārottarapaṭalam’ which deals with treatment for various diseases was selected. A copy on palm leaf manuscript scribed by Peruvanath Puṣpoth Nārāyaṇan Nambiār written in old Malayalam script was procured from Government Sanskrit College, Ernakulam and on search for other copies, another variant on paper scribed by P. Kunjikrishna Menon with similar title, content and language was also obtained from the same institution. During critical edition, the accepted readings and critical apparatus were noted. Contents were then transliterated to Sanskrit. Usage of old Malayalam script indicates that both the scribes belonged to Kerala. Most of the formulations in the cikitsāpaṭalās which can be subjected for practical and research purposes consist of limited number of dravyās that are easily available even today. The critically edited and translated copy of cikitsāpaṭalās of the manuscript ‘Prayogasārottarapaṭalam’ will be a handbook for all practitioners and beneficial for research scholars. Keywords: Prayogasārottarapaṭalam, critical edition, manuscript *MD Scholar, Department of Samhita Samskrita and Siddhanta, Government Ayurveda College, Thiruvananthapuram

Imbalance of doshas and its accumulation in the body is said to be basic pathology of disease. Vitiation of dosha is categorized as alpa, madhyama, prabhuta.
